A new coffee shop, bar and osteria is now open in the city of Hamilton.

The Grey made its debut earlier this month inside a newly renovated building at 24 S. Third St. in downtown Hamilton. An official ribbon-cutting ceremony was held Sept. 15.

The Grey, which spans 1,500 square feet across two floors, serves coffee and homemade goods by day, the latter crafted by Executive Pastry Chef Jesse Bonney, from 7:30 a.m.-2 p.m. Mondays through Fridays. Coffee is sourced from Seven Hills Coffee Roasters. The establishment then reopens from 5 p.m.-midnight Mondays through Saturdays for cocktails, wine and light bites.

The Grey is the first phase of a mixed-use development from Tandem Ventures that includes apartments and the Italian-inspired restaurant Carmagnola Trattoria. Jess Allman is the owner and founder of all the business entities tied to the property. The concepts are technically housed in two different buildings, which she purchased in 2023.
